WHAT INITIALLY SEEMED LIKE A CRAZY IDEA, ALMOST A DARE BETWEEN FATHER AND SON, IS NOW A THRIVING WINERY CALLED PETRACAVALLO, WHICH CRAFTS WINES THAT REFLECT BOTH TRADITION AND INNOVATION. MAKING WINE, AT PETRACAVALLO, MEANS WORKING THE EARTH AND THE VINEYARD WITH THE UTMOST CARE. GRAPES ARE GROWN USING TRADITIONAL METHODS, WITHOUT PESTICIDES, HAND-HARVESTED AND UNDERGO SPONTANEOUS FERMENTATION WITHOUT ADDED YEASTS, ENZYMES, OR OTHER ADDITIVES. MINIMAL SULFUR IS USED AT BOTTLING ONLY.
