WHILE DRAWING USEFUL LESSONS FROM HIS OENOLOGICAL STUDIES, FABIO HAS SURPASSED THE RECEIVED STANDARDS OF MANIPULATION OF THE ‘BIOCHEMICAL’ PROCESSES OF WINEMAKING AND HAS PLACED EMPHASIS, INSTEAD, ON HIS WORK IN THE VINE: THE DELICATE WORK OF THE VIGNAIOLO.
