FABIO SIGNORELLI, AN OENOLOGIST FROM MAZARA, SICILY, WHERE HE GREW UP AMIDST HIS GRANDFATHER’S VINES, BRINGS HIS EXPERTISE AND PASSION FOR NATURAL WINEMAKING TO MOUNT ETNA. AFTER STUDYING VITICULTURE AND OENOLOGY, LIKE HIS UNCLE, AT THE UNIVERSITY OF PALERMO AND WORKING IN VARIOUS WINERIES ACROSS SICILY AND MONTALCINO, FABIO JOINS THE EMERGING WINE SCENE ON ETNA. HE FOCUSES ON COLLABORATING WITH SMALL PRODUCERS WHO SHARE HIS ENOLOGICAL PHILOSOPHY, ALLOWING HIM TO EXPLORE THE UNIQUE CHARACTERISTICS OF THE VINEYARDS AND UNDERSTAND THE DIVERSE TERROIR OF ETNA. FABIO BELIEVES IN THE IMPORTANCE OF CAPTURING THE ESSENCE OF THE VINEYARD AND ADAPTING WINEMAKING PRACTICES TO EACH SPECIFIC VINTAGE, AS ETNA'S EVER-CHANGING LANDSCAPE DEMANDS ATTENTION TO DETAIL AND A DEEP UNDERSTANDING OF ITS NUANCES.
