MATTIA DONINI RUNS SCANDELARA OFF OF THE CASTEL ARIENTI FARM IN THE HILLS OF BOLOGNA. 3.5 HECTARES OF VINEYARDS, FARMED ORGANICALLY, ARE DIVIDED INTO TWO PLOTS WITH DIFFERENT EXPOSURES AND SOIL COMPOSITIONS. THE FIRST VINEYARD, PLANTED IN 1985, FACES SOUTH AND IS HOME TO PINOT BIANCO, ALBANA, TREBBIANO, AND RIESLING ITALICO. THE SECOND VINEYARD, PLANTED IN 2000, FACES NORTH AND FEATURES CHARDONNAY, INCROCIO MANZONI, PIGNOLETTO, AND BARBERA. IN THE WINERY, NO ADDITIVES OR SELECTED YEASTS ARE USED, AND WOOD IS PREFERRED FOR AGING.
